Spray drying is the process of turning solutions, slurries, or suspensions into tiny droplets in hot air. As these droplets descend, the moisture is rapidly vaporized, achieving the goal of drying and resulting in a powdery or granular product.

The drying process of materials is divided into a constant-speed stage and a deceleration stage. During the constant-speed stage, the rate at which moisture diffuses through the particles is greater than the rate at which moisture vaporizes. Moisture vaporization occurs on the surface of liquid droplets, and this stage is also known as the surface vaporization control stage. When the rate at which moisture diffuses through the particles decreases and cannot maintain sufficient wetting of the particle surface, the vaporization rate begins to slow down, and the drying process enters the deceleration stage, which is also referred to as the internal migration control stage.
